Why just go with with a standard yellow mustard when you have a special smoked sausage or a decadent wagyu burger. It goes without saying that you need to up your condiment game. These two mustards will help you add a little complexity and flavor to your next grill out.
Citrus Chili Mustard
Ingredients
1/2 Sweet onion (Diced)
1 C Orange Juice
1 Roasted Poblano Pepper ( Seeds and All )
2 oz Pickled Jalapeño
4.5 oz German or Dijon style Mustard
2 C Whole Grain Mustard
1/8 C Honey
1/2 C Orange Marmalade
Procedure
1 Carmelize the onion in a pot with minimal oil
2 Add all other ingredients and bring to a simmer. Simmer for 20 minutes.
3 Use an immersion blender or put in a processor or blender and process until smooth.
4 Chill Mustard. Mustard should be good for at least 10 days.
Spicy Cherry Mustard
Ingredients
1 1/4 C Dijon Mustard
1 C Cherry Reduction ( Cherry Juice that is reduced by 50 – 75% )
2 C Sriracha Whole Grain Mustard ( Mustard that is 7/8 Whole Grain Mustard and 1/8 Sriracha)
1/4 C Horseradish
1/2 C Mayo
Procedure
- Combine all ingredients and process using an immersion blender, blender, or food processor. Blend until Smooth.
- Chill the mustard. This mustard should hold for at least 2 weeks.
