If you’re anything like me, you love smoked fish. Here is a quick and easy way to use up the tail ends, the odds and ends, or just enjoy smoked fish.
Ingredients
1/4# butter
1 Shallot Minced
3 Cloves Garlic Minced
1 T Dill
1 1/4 # Smoked Fish (use any smoked fish you have available)
2# Cream Cheese
3/4 # Sun Dried Tomato
4T Water
Juice of 1 Lemon
Salt and Pepper to Taste
Procedure
This one is about as easy as it gets for something as flavorful as this.
1 Slowly sauté the shallot butter and dill in the butter and allow to cool after the garlic and shallots are translucent.
2 Blend all of the ingredients in a food processor until smooth. This may need to be done in batches depending on the size of the processor
3 Cool the spread
Yeah. Easy, right? But oh so delicious.
I would recommend serving this spread on rye crostini or even used as the main protein of a wrap, sandwich, or even mixed in for special grilled cheese. This spread is rich, smokey and bright.
